The new series of Valmar batch freezers, called Snowy,is a new technological score achieved in the field ofartisan gelato production machines. Valmar’s know-howand experience have been implemented in the newCOMBISYSTEM® batch freezing system governed by a PLCvia Touch & Type. A user-friendly and reliable batch wheretraditional product programme and work step selectiontools have been replaced by the new PLC able to optimizemany data under different working conditions duringthe batch freezing different steps, regardless of recipeformulation and/or its balancing.The new system deeply changes the quality standardsof artisan gelato batch freezing process. The producedgelato is now more resistant to melting as overrun is upto 40% of the mix weight. Air incorporation in marketablegelato maintains it more creamy and soft.
?The cutting-edge Valmar COMBISYSTEM is the unique and innovative batch freezing system patented by Valmar and installed in all the batch freezers of the TTi series. The system adapts to specific process requirements and the best batch freezing is chosen according to the recipe, work process and production rate. As a result the processed gelato does not melt quickly, is perfectly creamy, soft and easy to be worked with a spatula even when output temperatures reach -12°C at its core with an overrun up to 40% of mix weight.
