A commercial vacuum sealer is a small but powerful machine that is designed to seal food products in an impermeable package by extracting all the air. This isolates the product from external environments protecting it from contamination, and spoilage.
They are used in restaurants, hotels, bars and food processing facilities for seal packing meat, grains, fruits, and other foods that have low fluid content. Liquids or food with high fluid content cannot be sealed with a vacuum sealer. Food that is vacuum sealed and stored in a refrigerator can last two to three times longer than unsealed food.
Vacuum sealers use a barrier bag for vacuum sealing any product as regular polyethylene bags cannot resist vacuuming for a long time due to their porous structure.
There are three main types of commercial vacuum sealers:
Chamber vacuum sealer machine
Designed and developed for producing vacuum sealing for large batches these machines have a chamber designed to produce a seal. The product placed in a barrier bag is placed inside the machine chamber so the ends of the bag are placed between the sealing bars.
Unlike a tray sealer
which only produces a seal, a vacuum sealer produce a vacuum inside the chamber creating pressure on the bag that forces the air in the bag to move out from its ends. Once a complete vacuum is developed inside the bag, the sealing bars seal the bag by heating, melting, and then joining the ends of the bag.
External vacuum machine
Designed for producing seals at low batch size these machines are simpler, lighter, and cheaper than chamber vacuum machines. To produce a seal, the product is placed inside the bag and bag ends are placed on sealing bars.
When the machine is turned on suction pressure is applied to the bag that removes all air from it before heating, melting, and sealing the ends of the bags.
Pistol vacuum machine
These are special purpose machines that are designed and developed for remote jobs. They work in places where bags cannot be moved to the machine and machines have to be moved toward bags. They used a special purpose bag with a built-in nozzle to be attached to the machine. A small gun shaped machine is used to remove air from the bag to produce a vacuum and then produce a seal.
