The liqueur has a pale golden hue and shows subtle herb and fruit aromas. Pleasant spirit warmth finishes with lingering flavours of honeycomb and spice.
The recipe is a closely guarded blend, however our Master Distillery has let slip that it is based on a fusion of ancient Irish and Suisse recipes, some (but not all of the herbs) include cinnamon, coriander, exotic citrus, star anise and select Tahitian & Madagascan Vanillas.
Lighter than many liqueurs ours has an elegant balance between the whisky and honey. It is delicious to drink on its own at room temperature or a small amount of ice will enhance the honey flavours.
Great Southern Distilling Company | Spirits
Our distillery sits on the edge of the Princess Royal Harbour in Albany on the South West coast of Western Australia. The beauty of the region is undeniable, forests tall and rich, beaches white and endless, rain fresh from melted Antarctic snow caps - it is this spectacular environment that inspires us to produce the finest spirits we can.
Using locally sourced ingredients of outstanding quality we take our time to produce small batches of hand crafted spirits. Our Limeburners Single Malt Whisky is produced from Southern Wheat Belt barley and our white spirits are distilled using grapes from the Great Southern and Margaret River wine regions.
With the pristine local environment in mind we are powered by the Albany wind farm and strive to re-use and recycle where possible. The remains from our Whisky mash are fed to local cows (it is non-alcoholic!), and our barrels have been used before we buy them and are sent to wineries to be used after we are finished with them.
