Thought to originate from the Lombardy region of Italy, mascarpone is a fresh triple-cream cheese, milky white in colour. Soft enough to spread, it is made from the whey of cow’s milk enriched with extra cream. The name probably comes from the Italian dialect world mascarpa, referring to any cheeses made from whey.
