The unit has a large tray of water with the element above. Convection fans push air past the element and the water, creating the humidity. The fans then circulate the air evenly throughout the cabinet providing constant temperature. The unit also has a fully variable thermostat.
As the unit is convection based it can provide heat evenly throughout the cabinet. This means it can accommodate upper shelves that you normally wont find in a Standard Bain Marie. The Kentucky Hot Display comes with two upper levels of removable wire shelves with fluorescent lighting and standard Gastronorm wells for assorted tray sizes. The Kentucky Hot Display utilises maximum display area with minimum counter space.
