Insulated heated transport unit for distribution and holding of hot food. Available for different ovens like Rational, Hounö, Palux, Electrolux and others, both for fixed and detached mobile oven racks.
The mobile oven rack is easily pushed into the Banquet Master using the EOR* system (eleva-ted oven rack system), where it is lifted up gradually, lifting its castors off the floor, enabling the Banquet Master to transport the unit to your venue. This enhances ergonomics and rationalises handling. Both risk of spillage and burns by handling is reduced since pans or plates do not have to be moved separately between oven and Banquet Master.
Efficiency is also increased since you can hold food longer in the Banquet Master compared to traditional thermo covers, hence increasing the amount of regeneration cycles done with the same oven and thereby reducing your investment cost of your Banquet system. At a banquet in Doha, Qatar, for 4500 guests, the capacity increased with over 100% thanks to the unique Banquet Master System.
Banquet Master is equipped with one or two convection fans depending on model, which makes sure there is an even temperature in the whole compartment. Moisture can be controlled by the humidifier and the adjustable door ventilation.
Minimise risk of burning by reducing handling of plates and pans
Control panel: Max 90°C with infinitely variable setting and digital display for easy control oftemperature. An indicator light comes on for easy monitoring when the temperature is correct. Flashing display to indicate if the temperature is outside of set parameters (can be shut off). On/off – Standby mode.
Cleaning: The Banquet Master can be washed according to IP44.
Material: Stainless steel, aluminium and glassfibre reinforced plastic.
Castors: Sturdy 160 mm, 2 x swivel with brake and 2 x fixed, alternatively 200 mm castors depending on model. Leg stand also available.
Other: Bumper all-around the stainless steel chassi, easily replaced gasket, door opening of 270°. Magnet to hold door in place when open. Door sensor for automatic recognition to shut off the fan when the door is open.
Banquet Master is also available with compressor cooling or as a neutral unit and can be equipped with eutectic plates for shorter transport or holding time of cold food (quoted on request).
